Ingredients

  • Unsalted butter – ½ cup (softened at room temperature)
  • Coconut milk powder – 4 tbsp
  • Powdered sugar (icing sugar) – 1½ to 2 cups (as needed for sweetness)
  • Vanilla extract – ½ tsp (optional)
  • Warm water – 2 to 3 tbsp (to make coconut milk paste)
  • Pinch of salt (optional)
  • Prepare Coconut Milk:
  • In a small bowl, mix 4 tbsp coconut milk powder with 2–3 tbsp warm water to make a thick, creamy coconut milk paste.
  • Stir well until smooth and lump-free. Let it cool if warm.

Instructions

  1. Cream the Butter,Beat the soft butter using a hand mixer or whisk until it’s light and fluffy (about 2–3 minutes).

  2. Add Coconut Milk Paste,Add the prepared coconut milk paste to the butter and mix until well blended.

  3. Add Sugar & Flavor,Gradually add powdered sugar, beating well after each addition,Add vanilla extract and a pinch of salt if using.

  4. Whip Until Fluffy,Beat for another 2–3 minutes until the frosting is smooth, fluffy, and spreadable,If too thick, add a few drops of water; if too thin, add more sugar.

  5. Use It For:Spreading on cakes or cupcakes,Filling between cookies or cake layers,Topping muffins or scones
