Ingredients

  • Mixed veggies (carrot, sweet potato, cauliflower) – 2 cups
  • Coconut butter – 2 tbsp (melted)
  • Olive oil – 1 tbsp
  • Salt and pepper – to taste
  • Lemon juice – 1 tsp

Instructions

  1. Toss veggies with olive oil, salt, and pepper.

  2. Roast at 200°C for 25–30 mins.

  3. Drizzle with melted coconut butter and lemon juice before serving.
