Coconut Milk Pulao with Coconut Milk Powder

Fragrant basmati rice cooked in freshly prepared coconut milk using coconut milk powder, infused with whole spices. A light, flavorful meal or side dish.

Ingredients

  • Basmati rice – 1 cup (washed and soaked for 20 mins)
  • Coconut milk powder – 3 tbsp
  • Warm water – 2 cups
  • Onion – 1 large (thinly sliced)
  • Green chili – 1–2 (slit)
  • Ginger-garlic paste – 1 tsp
  • Bay leaf – 1
  • Cloves – 2
  • Cardamom – 2
  • Cinnamon stick – 1 small piece
  • Ghee or oil – 2 tbsp
  • Salt – to taste
  • Chopped coriander or mint – for garnish
  • Prepare Coconut Milk:
  • Mix 3 tbsp coconut milk powder with 2 cups warm water to make fresh coconut milk.

Instructions

  1. Saute Spices and Onions, Heat ghee/oil in a deep pan or pressure cooker, Add bay leaf, cloves, cardamom, cinnamon – sauté for a few seconds, Add sliced onions and sauté till golden brown, Add ginger-garlic paste and green chilies – cook for 1 minute.

  2. Add Rice and Coconut Milk, Add the soaked and drained basmati rice, Gently stir for 1–2 minutes to coat the rice with the masala, Pour in the prepared coconut milk, add salt.

  3. Cook the Pulao, If using a pan: Cover and cook on low flame for 12–15 minutes or until rice is done, If using a pressure cooker: Cook for 1 whistle on medium flame, then switch off.
