Coconut Sugar Glazed Nuts

Ingredients

  • Mixed nuts – 1 cup (cashews, almonds, walnuts, pecans, etc.)
  • Coconut sugar – ½ cup
  • Water – 2 tbsp
  • Cinnamon powder – ¼ tsp (optional)
  • Salt – a pinch
  • Vanilla essence – ¼ tsp (optional)

Instructions

  1. Toast the Nuts,In a dry pan, toast the nuts on medium heat for 3–4 minutes until lightly golden and fragrant. Set aside.

  2. Make the Glaze,In the same pan, add coconut sugar and water,Heat on low until sugar dissolves and turns bubbly,Add cinnamon, salt, and vanilla. Mix well.

  3. Coat the Nuts,Add the toasted nuts into the bubbling glaze,Stir constantly until the liquid thickens and coats the nuts (about 2–3 minutes),Once the glaze starts to crystalize and dry on the nuts, remove from heat.

  4. Cool & Store,Spread nuts on parchment paper or a greased plate to cool completely,Store in an airtight container for up to 2 weeks.
