German Coconut Buns

Soft, fluffy buns filled with a creamy, mildly sweet coconut topping. A bakery-style delight perfect with tea or coffee.

Ingredients

  • For the Bun Dough:
  • All-purpose flour – 2 cups
  • Warm milk – ½ cup
  • Sugar – 2 tbsp
  • Instant yeast – 1 tsp
  • Salt – ½ tsp
  • Butter – 2 tbsp (softened)
  • Egg – 1
  • For the Coconut Topping:
  • Desiccated coconut – ¾ cup
  • Sugar – ⅓ cup
  • Milk – ¼ cup
  • Butter – 1 tbsp
  • Vanilla essence – ½ tsp

Instructions

  1. Make the Dough,In a bowl, mix warm milk, yeast, and sugar. Let it sit for 5–10 minutes until frothy,Add flour, salt, soft butter, and egg. Mix and knead into a soft, smooth dough (add a little flour if sticky),Cover and let it rise in a warm place for about 1 hour, or until doubled.

  2. Make the Coconut Topping,In a small pan, combine desiccated coconut, sugar, milk, and butter.,Cook on low heat for 2–3 minutes until everything blends and thickens slightly,Add vanilla essence and let it cool.

  3. Shape the Buns,Punch down the dough and divide into 6–8 equal balls,Place on a greased or parchment-lined tray,Gently press the center of each bun to create a shallow dip,Spoon the coconut mixture into the center of each bun.

  4. Bake,Preheat oven to 180°C (350°F),Bake buns for 18–20 minutes, or until golden brown on top and cooked through,Cool slightly before serving.
