Ingredients

  • Raw jackfruit (kathal) – 2 cups (cut into small cubes)
  • Onion – 1 large (sliced)
  • Coconut Aminos Natural – 2 to 3 tbsp
  • Garlic – 4 cloves (chopped)
  • Ginger – 1 inch (chopped)
  • Turmeric powder – ¼ tsp
  • Red chili powder – ½ tsp (optional)
  • Curry leaves – a few
  • Mustard seeds – ½ tsp
  • Coconut oil or any cooking oil – 1½ tbsp
  • Salt – as needed (Coconut aminos is mildly salty)

Instructions

  1. Boil jackfruit pieces in salted water with turmeric for 10–12 mins until soft,Drain and set aside.

  2. Tempering,Heat oil in a pan,Add mustard seeds and let them splutter,Add curry leaves, ginger, and garlic. Sauté for a minute.

  3. Cook the Fry,Add onions and sauté until golden brown,Add boiled jackfruit, red chili powder (optional), and stir well,Pour in Coconut Aminos Natural and cook uncovered on medium heat for 8–10 minutes until slightly crispy and well coated.
