Ingredients

  • Rolled oats – 1 cup
  • Peanut butter or almond butter – ½ cup
  • Virgin coconut oil – 2 tbsp
  • Honey or maple syrup – 2–3 tbsp
  • Protein powder (vanilla or chocolate) – ¼ cup (optional but recommended)
  • Desiccated coconut – 2 tbsp (plus more for rolling)
  • Chia seeds or flax seeds – 1 tbsp (optional)
  • Chopped dark chocolate or nuts – 2 tbsp
  • A pinch of salt

Instructions

  1. Mix,In a large bowl, add: Oats, protein powder, desiccated coconut, chia/flax seeds, andStir to combine dry ingredients.

  2. Combine Wet Ingredients,In a separate bowl or pan, gently melt together: Peanut butter, virgin coconut oil, and honey/maple syrup,Mix until smooth.

  3. Form the Dough,Pour the wet mix into the dry mix,Add chopped nuts or chocolate,Mix everything well — the mixture should be sticky but firm enough to shape.(If too dry, add a little more coconut oil or honey.)

  4. Shape,Scoop out small portions and roll into balls using your hands.,Optionally roll them in extra desiccated coconut for coating.

  5. Chill,Place in the refrigerator for 15–30 minutes to firm up.
