Ragi Coconut Sugar Halwa

Ingredients

  • Ragi flour (finger millet flour) – ½ cup
  • Coconut sugar – ½ to ¾ cup (adjust to taste)
  • Water – 2 cups
  • A2 ghee or regular ghee – 2–3 tbsp
  • Cardamom powder – ½ tsp
  • Cashews – 6–8
  • Raisins – 1 tbsp
  • Pinch of salt (optional, enhances taste)

Instructions

  1. Roast Ragi,Heat 1 tbsp ghee in a pan,Add ragi flour and roast on low flame for 3–4 minutes until slightly aromatic.

  2. Cook the Halwa,Add 2 cups water gradually while stirring to avoid lumps,Cook on low flame, stirring continuously, until the mixture thickens,Add coconut sugar and mix well until it melts and blends,Stir in cardamom powder.

  3. In a small pan, heat the rest of the ghee, fry cashews and raisins until golden and puffed,Add to the halwa and mix. Cook for 2–3 more minutes until glossy.
