Ingredients

  • Coconut Flour – ½ cup (60 g)
  • Coconut Oil (melted) – ¼ cup
  • Coconut Sugar – 2 tbsp
  • Eggs – 2 large
  • Vanilla Extract – 1 tsp
  • Salt – a pinch

Instructions

  1. Grease your pie pan lightly or line with parchment.

  2. In a bowl, whisk together eggs, melted coconut oil, vanilla extract, and coconut sugar.

  3. Add coconut flour and salt to the wet mix. Stir until a dough forms. Let it sit for 2–3 minutes — coconut flour absorbs moisture fast.

  4. Press the dough evenly into your pie pan using your hands or the back of a spoon. Press up the sides too.

  5. Bake for 12–15 minutes or until the edges turn golden brown.
