Teriyaki Quinoa Stir-Fry

Ingredients

  • Cooked quinoa – 2 cups
  • Mixed veggies – 2 cups (carrot, bell pepper, broccoli, beans, corn, etc.)
  • Onion – 1 small (sliced)
  • Garlic – 2 cloves (minced)
  • Coconut Aminos Teriyaki – 4 tbsp
  • Oil – 1 tbsp (sesame or any light oil)
  • Black pepper – ¼ tsp
  • Salt – a pinch (if needed)
  • Spring onions or sesame seeds – for garnish (optional)

Instructions

  1. Cook Quinoa,Rinse 1 cup quinoa and cook with 2 cups water until fluffy. Set aside,(Or use leftover cooked quinoa.)

  2. Stir-Fry Veggies,Heat oil in a pan or wok,Add garlic and onion, sauté for 1 min,Add harder veggies (like carrot, beans) first, stir-fry 2–3 mins,Add softer veggies (like capsicum, corn) and cook 2–3 mins more.

  3. Add Quinoa and Sauce,Add cooked quinoa into the pan,Pour Coconut Aminos Teriyaki over it,Mix well and stir-fry for 2–3 mins until everything is coated and hot,Add pepper and adjust salt if needed.
