Ingredients

  • For the Cream Layer:
  • Mascarpone cheese – 1 cup (or hung curd/cream cheese substitute)
  • Whipped cream – 1 cup (soft peaks)
  • Coconut sugar – ¼ cup
  • Vanilla essence – ½ tsp
  • Ripe banana – 1 (mashed)
  • For Layering:
  • Ladyfinger biscuits – 12–15 (or sponge cake slices)
  • Strong brewed coffee – ½ cup (cooled)
  • Cocoa powder – for dusting
  • Banana slices – for layers or topping

Instructions

  • Make the Cream,In a bowl, whisk mascarpone, coconut sugar, and vanilla until smooth,Add the mashed banana and gently mix,Fold in the whipped cream gently until well combined. Keep in fridge.

  • Soak the Biscuits,Quickly dip each ladyfinger into cold coffee (1 second per side — don’t soak too long),Arrange in a single layer in a serving dish.

  • AssembleSpread half of the banana cream over the biscuit layer,Add another layer of dipped ladyfingers,Spread the rest of the cream on top,Dust with cocoa powder using a sieve.

  • Cover and refrigerate for at least 4 hours or overnight for best flavor and texture.
