Make the Cream,In a bowl, whisk mascarpone, coconut sugar, and vanilla until smooth,Add the mashed banana and gently mix,Fold in the whipped cream gently until well combined. Keep in fridge.

Soak the Biscuits,Quickly dip each ladyfinger into cold coffee (1 second per side — don’t soak too long),Arrange in a single layer in a serving dish.
