Our vinegar is made from sap collected from coconut blossoms. This sap is allowed to naturally ferment for several months. During this time, the natural sugars in the sap convert to alcohol and then to acetic acid, creating vinegar. We keep our vinegar raw and unpasteurized to preserve the "mother of vinegar," a colony of beneficial live bacteria.
Note: Coconut vinegar's primary health benefits come from its live probiotic cultures ("the mother") and its rich mineral content, including potassium, which are not reflected in a standard nutritional panel.
Store in a cool, dark place, away from direct sunlight, to protect the live "mother" cultures. Refrigeration is not necessary.
