Coconut Flour Brownies (Gluten-Free)

Ingredients

  • Coconut Flour – ¼ cup (don’t add more, it absorbs a lot!)
  • Cocoa Powder – ¼ cup
  • Coconut Sugar – ½ cup
  • Eggs – 3 large
  • Melted Coconut Oil
  • Vanilla Extract – 1 tsp
  • Salt – a pinch
  • Dark chocolate chips – ¼ cup for extra richness
  • Baking powder – ½ tsp for slight lift

Instructions

  • Preheat your oven to 175°C (350°F). Grease or line a small square pan with parchment paper.

  • In a bowl, whisk together eggs, melted coconut oil, vanilla, and coconut sugar until smooth.

  • Sift in cocoa powder, coconut flour, salt, and baking powder. Mix until well combined.

  • Stir in chocolate chips or chopped nuts if using.

  • Pour batter into the prepared pan. Spread evenly. Bake for 20–25 minutes, or until a toothpick comes out with moist crumbs (not fully clean).

  • Let brownies cool completely before cutting — they firm up as they cool.
