Crunchy homemade granola baked with Virgin Coconut Oil, oats, nuts, and honey. A healthy, fiber-rich snack or breakfast topping with a tropical twist.

Ingredients

  • Rolled oats – 2 cups
  • Virgin coconut oil – ¼ cup (melted)
  • Honey or maple syrup – ¼ cup
  • Chopped nuts (almonds, cashews, walnuts) – ½ cup
  • Desiccated coconut or coconut flakes – ½ cup
  • dried fruits – ¼ cup
  • Vanilla essence – 1 tsp
  • Cinnamon powder – ½ tsp
  • Salt – a pinch

Instructions

  • Preheat Oven,Preheat your oven to 160°C (320°F),Line a baking tray with parchment paper.

  • Mix Wet Ingredients,In a bowl, mix: ¼ cup melted virgin coconut oil,¼ cup honey or maple syrup,1 tsp vanilla essence

  • Add Dry Ingredients,In a large mixing bowl, combine:2 cups rolled oats,½ cup chopped nuts,½ cup desiccated coconut,½ tsp cinnamon,Pinch of salt,Pour the wet mixture over the dry ingredients and mix well until everything is coated.

  • Bake,Spread the mixture evenly on the baking tray,Bake for 25–30 minutes, stirring once halfway through, until golden and crisp,Let it cool completely — it will crisp up more as it cools.

  • Add Dried Fruits ,Once cooled, mix in raisins, cranberries, or other dried fruits.
