German Coconut Buns

Soft, fluffy buns filled with a creamy, mildly sweet coconut topping. A bakery-style delight perfect with tea or coffee.

Ingredients

  • For the Bun Dough:
  • All-purpose flour – 2 cups
  • Warm milk – ½ cup
  • Sugar – 2 tbsp
  • Instant yeast – 1 tsp
  • Salt – ½ tsp
  • Butter – 2 tbsp (softened)
  • Egg – 1
  • For the Coconut Topping:
  • Desiccated coconut – ¾ cup
  • Sugar – ⅓ cup
  • Milk – ¼ cup
  • Butter – 1 tbsp
  • Vanilla essence – ½ tsp

Instructions

  • Make the Dough,In a bowl, mix warm milk, yeast, and sugar. Let it sit for 5–10 minutes until frothy,Add flour, salt, soft butter, and egg. Mix and knead into a soft, smooth dough (add a little flour if sticky),Cover and let it rise in a warm place for about 1 hour, or until doubled.

  • Make the Coconut Topping,In a small pan, combine desiccated coconut, sugar, milk, and butter.,Cook on low heat for 2–3 minutes until everything blends and thickens slightly,Add vanilla essence and let it cool.

  • Shape the Buns,Punch down the dough and divide into 6–8 equal balls,Place on a greased or parchment-lined tray,Gently press the center of each bun to create a shallow dip,Spoon the coconut mixture into the center of each bun.

  • Bake,Preheat oven to 180°C (350°F),Bake buns for 18–20 minutes, or until golden brown on top and cooked through,Cool slightly before serving.
