Steamed rice flour and coconut layered and cooked in a traditional puttu maker, enhanced with a touch of Virgin Coconut Oil. A soft and fluffy breakfast staple from Kerala.

Prepare the Flour,In a bowl, add 1 cup puttu flour and ¼ tsp salt,Sprinkle warm water little by little and mix using fingers,The flour should look wet and crumbly, but when pressed in your fist, it should hold shape,Add 1 tbsp virgin coconut oil and mix — this gives extra aroma and softness.

Layer in the Puttu Maker,In the cylindrical puttu kutti (puttu steamer), place a spoon of grated coconut at the bottom,Then a layer of moist rice flour,Repeat layers of coconut and flour,End with grated coconut on top

Steam,Attach the puttu kutti to the boiling water pot (puttu kudam),Steam for about 7–10 minutes or until you see steam escaping from the top,Remove and push out the steamed puttu using a wooden stick.
