Ingredients

  • Rolled oats – 1 cup
  • Peanut butter or almond butter – ½ cup
  • Virgin coconut oil – 2 tbsp
  • Honey or maple syrup – 2–3 tbsp
  • Protein powder (vanilla or chocolate) – ¼ cup (optional but recommended)
  • Desiccated coconut – 2 tbsp (plus more for rolling)
  • Chia seeds or flax seeds – 1 tbsp (optional)
  • Chopped dark chocolate or nuts – 2 tbsp

Instructions

  • Mix,In a large bowl, add: Oats, protein powder, desiccated coconut, chia/flax seeds, andStir to combine dry ingredients.

  • Combine Wet Ingredients,In a separate bowl or pan, gently melt together: Peanut butter, virgin coconut oil, and honey/maple syrup,Mix until smooth.

  • Form the Dough,Pour the wet mix into the dry mix,Add chopped nuts or chocolate,Mix everything well — the mixture should be sticky but firm enough to shape.(If too dry, add a little more coconut oil or honey.)

  • Shape,Scoop out small portions and roll into balls using your hands.,Optionally roll them in extra desiccated coconut for coating.

  • Chill,Place in the refrigerator for 15–30 minutes to firm up.
