Ragi Coconut Sugar Halwa

A warm, fudgy halwa made with finger millet, coconut sugar, and ghee-roasted cashews. Nutritious, earthy, and melt-in-mouth good!

Ingredients

  • Ragi flour (finger millet flour) – ½ cup
  • Coconut sugar – ½ to ¾ cup (adjust to taste)
  • Water – 2 cups
  • A2 ghee or regular ghee – 2–3 tbsp
  • Cardamom powder – ½ tsp
  • Cashews – 6–8
  • Raisins – 1 tbsp
  • Pinch of salt (optional, enhances taste)

Instructions

  • Roast Ragi,Heat 1 tbsp ghee in a pan,Add ragi flour and roast on low flame for 3–4 minutes until slightly aromatic.

  • Cook the Halwa,Add 2 cups water gradually while stirring to avoid lumps,Cook on low flame, stirring continuously, until the mixture thickens,Add coconut sugar and mix well until it melts and blends,Stir in cardamom powder.

  • In a small pan, heat the rest of the ghee, fry cashews and raisins until golden and puffed,Add to the halwa and mix. Cook for 2–3 more minutes until glossy.
