Teriyaki Quinoa Stir-Fry

Protein-packed quinoa tossed with crisp stir-fried veggies in a sweet-savoury Coconut Aminos Teriyaki sauce. A gluten-free, guilt-free Asian bowl in minutes!

Ingredients

  • Cooked quinoa – 2 cups
  • Mixed veggies – 2 cups (carrot, bell pepper, broccoli, beans, corn, etc.)
  • Onion – 1 small (sliced)
  • Garlic – 2 cloves (minced)
  • Coconut Aminos Teriyaki – 4 tbsp
  • Oil – 1 tbsp (sesame or any light oil)
  • Black pepper – ¼ tsp
  • Salt – a pinch (if needed)
  • Spring onions or sesame seeds – for garnish (optional)

Instructions

  • Cook Quinoa,Rinse 1 cup quinoa and cook with 2 cups water until fluffy. Set aside,(Or use leftover cooked quinoa.)

  • Stir-Fry Veggies,Heat oil in a pan or wok,Add garlic and onion, sauté for 1 min,Add harder veggies (like carrot, beans) first, stir-fry 2–3 mins,Add softer veggies (like capsicum, corn) and cook 2–3 mins more.

  • Add Quinoa and Sauce,Add cooked quinoa into the pan,Pour Coconut Aminos Teriyaki over it,Mix well and stir-fry for 2–3 mins until everything is coated and hot,Add pepper and adjust salt if needed.
